Jazzy Beetroot Salsa

If you’re like me, you probably like a bit of colour in your life, especially when it comes to food.

Don’t get me wrong, there are those days when all I want is BEIGE aka. crisps, cookies and other naughty beige foods. In fact while watching The Great British Bake Off last night, bread and butter was all I could think about.

However, today is not one of those days and with my Bake Off desires well and truly quashed I decided to whip up this cheeky beetroot salsa for lunch with an old friend. It also provided fantastic dissertation procrastination.

I think I’ll bring it to the party on Saturday, because everyone needs a break from sausages from time to time…

Give it a whirl!


6 chopped cooked beetroots (buy the vacuum packed ones as they are ready to go)

1 small red onion

1 handful of fresh mint

1 handful of fresh coriander

1 pack of feta chopped into cubes (add more or less depending on your cheesy needs)

1 tablespoon of sweet chilli sauce or a spoonful or sugar

1 chopped chilli

zest and juice of 2 limes

pinch of salt and pepper


Chop up the onions and place into a bowl along with the fresh herbs, chilli, lime and sweet chilli sauce. Mix together and add the chopped beetroot. Give it another whirl and add some salt and pepper. Finally add the chopped feta cheese at the very end. Voila!
